2 Years and Counting

Two years ago today we were walking out of the Reno temple, newly married. What a great two years it has been.
We celebrated by making Chicken Tikka Masala and Naan together. We modified the recipes a bit, and they were amazing.

Thanks for being my best friend and my love, Squire. You make me so happy and I can't wait to spend the rest of my life with you.

  1. That looks so so yummy! Happy Anniversary you guys!

  2. Awww! I can't believe you guys have been married that long! Congrats!

  3. I tried to make nan once and it was gross. What recipe did you use? And while we're at it, what recipe did you use for the tiki masala. Also, please excuse my spelling. It's never been one of my strong points.

  4. Heather - You can check the links on the blog for the recipes. Just scroll over the words. I just made a couple changes to each of them.

For the Naan, instead of baking it in the oven, I just fried them in a tiny bit of canola oil in my frying pan after rolling them really thin. I didn't have the special onion seasoning, so I just lightly sprinkled them with garlic salt while they were in the pan.

For the Tikka Masala, we cut down the pepper in the marinade to 1/2 tsp. and didn't use any salt. In the sauce, we added salt to taste (Probably about 1 tsp. - 1 1/2 tsp.) It needs quite a bit of salt to get the real Indian taste, but certainly not as much as the recipe calls for. We also added about a tsp. of garam masala to the sauce. And, we didn't do the skewer thing. We just cooked up the chicken in a frying pan. Less mess and one less step to hassle with. :)
