Chocolate-Covered Strawberries = Love

Costco has been making chocolate covered strawberries in preparation for the big day of love - Valentine's Day of course! They are absolutely delicious. (We get to sample a thing or two in the bakery. : ) ) But, I didn't want to spend $12.99 for just 12 (albeit huge) strawberries. So, I thought Squire and I could make some together instead. And they turned out great! Just thought I'd share some pictures and the recipe in case you are craving some of these yourself. Happy Valentine's Day!

We washed the strawberries in a clean sink, filled with cold water and some vinegar. I learned this trick at Costco. It's how they wash their strawberries.We bought milk chocolate in bulk and some white chocolate chips. We only used 1/3 of the milk chocolate (about 8oz.) and a handful of the white chocolate chips.This my friends, is my make-shift double boiler. I heated up the water in the pot and then just let the glass bowl float inside it. I melted about a tablespoon of shortening in the bowl first, and then threw in the milk chocolate (cut up in chunks), and stirred occasionally until it was melted all the way through.These are the strawberries after we dipped them in the Milk chocolate. We then threw them in the refrigerator for about 10 minutes while I prepped the white chocolate.I turned the heat off on the stove. I put some white chocolate chips in a decorating bag, and set it in the hot water to make the chips melt. This is much better than microwaving!!Make sure to squish the bag with the white chocolate chips every now and then to make sure all the chocolate gets melted.The fun part! Ice the strawberries with the white chocolate however you like! Refrigerate for a few more minutes and...
