Best Zucchini Bread EVER!



One of our landlords, Amy, gave us a few zucchini squash from her garden the day we moved in . Anyways, I decided to make some zucchini bread out of the biggest and last one we had. I have to say, it was the best zucchini bread I have ever had! I found the recipe on Allrecipes.com. I followed it closely, except for the walnuts - I just didn't add those. But you should all try this recipe out! It is absolutely delicious!

Mom's Zucchini Bread

INGREDIENTS:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

DIRECTIONS:

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  4. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

  3. Looks good, Jami. I, too, love allrecipes. You'll have to try the downeast main pumpkin bread. Very good with raisins or choco-chips. They make great muffins, too. Have fun......Sheryl

  4. Thanks for the recipe, we have a garden and I have so much zucchini I don't know what to do with it all. I wanted to make some bread but haven't gotten a chance to look online yet for a good recipe. so I'll be giving this one a try.

  5. Tried this recipe today, Jami. Made lots of mini-muffins out of it. Mark and I really liked them and I took a basket of them to a sick sister in the ward. Thanks for the inspiration...........Sheryl
